Calicova is a family-run company that was born from a simple but powerful mission: to honour the land and artisans of Guatemala by sharing its finest natural ingredients with the culinary world. Every pod we import is hand-harvested and sun-cured to perfection.

We specialise in small-batch, hand-harvested Vanilla Maya, a rare species (Vanilla Cribbiana) grown deep in the misty highlands of Guatemala. We prioritise flavour, fairness, and sustainability over scale.

Rich Flavour

The vanillin content of our vanilla (2.13 ± 0.68%) rivals or even surpasses top-tier Vanilla Tahitensis and falls within the upper limits of Vanilla Planifolia, the current gold standard in commercial vanilla. Additionally, it contains anisyl compounds, which contribute floral and spicy notes typical of Vanilla Pampona.

Aromatic Profile

The aromatic profile of Calicova Vanilla is a combination of all three major commercial species. GC-MS analysis identified 70 volatile aroma compounds. Exceeding the average profile ot other commercial species.

The quality of our vanilla it’s backed by peer-reviewed science. Published scientific studies confirmed that Vanilla Maya surpasses many commercial varieties in aromatic complexity, vanillin concentration, and fatty acid content.

Raised in Guatemala, surrounded by vibrant colours, bold flavours, and lush nature. A creative director by trade with a lifelong love for pastries and the vibrant culture of his homeland. His vision for Calicova is rooted in honouring Guatemala’s heritage and introducing chefs to the richness of Guatemala and its flavours beyond the usual.

Holds a PhD in Neuroscience and completed her postdoctoral research at the University of Oxford. A scientist by training and a baker by passion, Andrea brings a deep curiosity and precision to everything we do. Her love for baking inspires us to explore and work with the highest-quality ingredients, continually experimenting and refining.
